Cherries are an extremely nutritious fruit, containing important nutrients such as lutein and zeaxanthin, beta carotene, vitamins A and C, potassium, calcium and magnesium. Freeze-drying, rather than spray drying or drum drying, ensures that this extract retains these beneficial nutrients instead of losing them during processing (by exposing the berries to heat).

Cultivation of the cherry tree began with the ancient Greeks. Roman Legionaries considered cherries an essential part of the diet, and were probably responsible for spreading cherries throughout Europe. The cherry arrived in America in 1629, along with English settlers, and eventually became an important crop. Sweet cherries are primarily cultivated in the western United States. Cherry trees are dependent on honeybees for pollination – one to two hives per acre are needed. Beekeepers bring the hives from California to Oregon, then Washington, and finally Montana, following the blooming cherry trees.
